                          Our Butcher

                          _  Any small farmer growing animals for meat has to find a butcher they trust!  You have like the way they cut the meats, package the product, and know you are getting your own meat back!   In New York State in order sell meat by the pound we have to use a USDA inspected facility. They are few and far between. 

                          We use Leona Meat Plant in Troy, PA., 63 miles from our farm.  Not only do we trust them, but we know we are getting our own meats back.  Leona is a USDA family-owned plant.  We work directly with the owner.  Since there are so few processors and so many farms using them we have to book our butcher dates 2 to 3 years in advance.  Many of our dates are for animals that are not even conceived yet!  In order to be sure we can get them in when they are ready this is what we have to do.

                          Leona is a certified organic butcher, which means they also have to treat the animal as humanly as possible to do their job.  Leona processes all of our beef and pork and any of the goat or lamb we may have.  All the meat sold by the pound is in clear vacuum sealed packages.
